What makes this recipe even better, you can add different flavourings like some fresh orange juice and rind, and you have a chocolate orange cake. Good for cakes or cupcakes.

METHOD
1. Add plain flour and cocoa powder into your mixing bowl, followed by the baking powder and soda then your caster sugar. Mix the dry ingredients together.
2. Add wet ingredients, milk, espresso, eggs, vegetable oil, boiling water and your choice of vanilla. Mix for 2 minutes on medium low, pause to scrape the mixing bowl down. Mix for a further 1 - 2 minutes and check there are no further dry ingredients in the bowl.
3. Either pour into cake a lined cake tin/s or patty pans. In the oven at 160°c fan forced on the middle rack for 20 min, skewer to ensure they are cooked all the way though.

NOTE: Its better if the milk and eggs are room temp, assists in the ingredients incorporate easier.
