French chocolate mousse is often served chilled, it can be topped with whipped cream, grated chocolate, or berries. Simple yet decadent, French chocolate mousse is a timeless treat for any chocolate lover.

1. Over a bain-marie melt your dark chocolate and butter, ensure you are stirring to avoid any solidification around the rim of the bowl.
Remove from heat and cool to approximately 35°c, too hot it will deflate your mixture to cold and it won’t mix into your egg whites.
(Eggs are required to be just below room temperature for the same reason as above).
2. Whip cream to stiff peaks and as this is happening whip egg whites and sugar to firmness.
3. Mix egg yolks into cream, pour over cream and stir.
4. Mix in cooled chocolate and mix doesn’t have to be completely combined.
5. Fold in your egg whites, not vigorously as it will deflate the foam. Ensure the egg white has been successfully mixed in as it may freak out your guests.
Chill and serve.
