Here are the facts.
Don't over season your steak before you cook, majority of the seasoning will stick to the pan. Board season when you rest after cooking.
Choose a decent cut and assist the cook by leaving it on the bench for 30 min before the cook. This way the chill has been taken out and the pan doesn’t need to work so hard to bring up to temp.
Cook a killer gravy, start by creating an Espagnole sauce. You can then reduce down to a demi glaze 🤤 It slaps!
