Lemon Curd
Homemade lemon curd is an easy and lusciously smooth, tangy spread, bursting with vibrant citrus flavour. Made from fresh lemons, butter, sugar, and eggs, its velvety texture makes it perfect for spreading on toast, filling pastries, or swirling into yogurt for a zesty treat.

1. Adding all your ingredients to a medium saucepan
2. Place the heat on as low as you can so you can gradually bring the contents to temperature.
3. Once the butter has melted you can increase the heat slightly but if the curd starts to simmer pull off the heat right away.
4. Stir stir stir, you will be stirring for at least 5 to 8 minutes depending on your desired consistency.
5. Place into a heatproof bowl and let cool before placing in the fridge.
NOTE: You can have short breaks however you need to ensure the saucepan is off the heat to do so.
