METHOD
1. Place whole spices into a heavy based pot, placing the bay leaves on the bottom and splitting the cinnamon quill to maximise surface area. Roast / toast for 10 minutes on high stirring to ensure the spices don’t burn.
2. Let the spices cool for a few minutes before transferring into a processor or blender and blitz until a rough powder ensuring all ingredients are blended together.
Store in an airtight container for up to 4 months.
